Here I am cooking Beef Enchilada Casserole with Tomato-Avocado Salad that I got from Sandy Richard's book Life's On Fire: Cooking for the Rushed.

I highly recommend any of Sandy's books, but this one is my all-time favourite. It was her first book and I found it spoke to me. I have given it as gifts over the years. It is no longer available or in print with no reprints scheduled. However, if you come across it on a discount shelf or through eBay, I strongly suggest you pick it up.

Mexican-type food is my favourite. I really enjoy burritos, tacos, nachos, and just about anything else Mexican.

The above is a bean and beef burrito with lettuce, salsa, and sour cream.

Here is a recipe for my favourite Black Bean Burritos (follow the link for the Allrecipes Site).

Black Bean Burritos
Easy and delicious vegetarian meal. Garnish with Salsa, Lettuce, Scallions, Tomatoes, and Sour Cream.
Serves 6

Ingredients:
1 can Black Beans
1 cup Onions, chopped
1/2 cup Dry white wine
2 tsp Garlic, minced
2 tsp Cumin, ground
1/4 tsp Black Pepper, ground
1/4 cup Orange juice
1/8 tsp Cayenne pepper
To taste Salt

Garnish
Salsa
Lettuce, shredded
Green Onions, chopped
Tomatoes
Cilantro, chopped (or dried)
6 Flour Tortillas

Instructions:
  • In a pot, braise the onions in 1/2 cup white wine with the garlic, cumin, and black pepper.
  • Add the black beans with 1/4 cup of bean liquid to the onions and stir
  • Add the orange juice and cayenne to the beans
  • Then ad the salt to taste
  • To assemble the burrito, place about 1/2 cup of the black beans, and 1/4 cup of the salsa in the centre of the tortilla. Fold the opposite ends of the tortilla inward and roll. You can also add some chopped lettuce, onions, tomatoes, or cilantro before rolling the tortilla.
  • Ladle some salsa over the tortilla.

Truth be known, I actually have many favourite foods, including bananas. I chose a banana because I could draw it without having to get up and getting a real one as a reference.

I like bananas dipped in chocolate (frozen or not) but don't do that very often.  When I was little, my mother would give me banana dipped in white sugar. My friend, Murilo, was telling me he enjoyed a banana microwaved and mashed with cinnamon. I tried it recently and it is good.  My favourite is frozen bananas that I enjoy during the summer during the summer. Sometimes I will blend a frozen banana in a blender until it is the consistency of ice cream. Yum!

Warning: Be careful biting into a frozen banana. It can break your teeth.

Waiting Room


I had to take our Hyundai Santa Fe for a regular maintenance tune-up and decided to wait rather than get a ride home.  This is the waiting area. They always have fresh baked cookies on the table, and there is a coffee machine and hot water for tea.  The chairs are quite comfortable. They have satellite TV and a large screen for the customers, as well as all the requisite magazines and newspapers.


I moved across the room, to the chair in the first drawing, after I got up for more coffee and these two ladies sat down where I was originally sitting. It is okay that they sat there. There are plenty of seats for everyone, and all seats are close to the cookies, magazines, and television.

I did not finish this drawing (the chairs should be black) because I my vehicle was ready and I went home.

I drew this from a McDonald's place mat. I really enjoy Greek salad. It and Caesar are my favourites.
